just had a granite tile counter top put in with an under mount sink installed and the installer did not use any hardware when installing the sink. he just used and silicone epoxy to attach to the under side of the granite. Is this correct and will hold weight or should hardware have been used?

Some installers just use silicone to fasten the sink to the bottom of the counter top. There are mounting clips available for most sinks to help hold the weight that can be used along with the silicone. Another common way to help support the sink is to use a strapping called “All Round” screwed to the underside of the counter(into the plywood support) passed underneath the sink and then screwed to the other side. I would use two straps for a double bowl sink, This is not the prettiest weay to do it but it offers the most support and is very easy to install. Just make sure that when you tighten the screws you draw up the band snug to the bottom of the sink. Also make sure that the screws are not too long.

mounting hardware holding it in too. Epoxy is great stuff, but mixed improperly or applied to an improperly cleaned surface can lead to a catastrophic and very messy disaster. And it could take years for it to fail. Probably just before Christmas dinner or something.

Metal strapping, even scrap wood screwed to trap the edges of the sink to the wood baseboard of the tile would be better than nothing. Again, just watch out for the length of the screws! You don’t want to crack the new tiles!!!

A mechanical mounting or some sort of support AND the epoxy would be better than just the epoxy. Even something as ugly as a 2 by 2 supporting the bottom of the sink/sinks and screwed to the sides of the cabinet would be better than just epoxy.
