I recently purchased a home that was built in the 40s and it has plastic tile on the walls in the kitchen and bathroom. Some of it is starting to come off, and it is leaving a orangy substance that was the original adhesive. How do I remove the tile and the adhesive without leaving gouges in the walls

I would use a 4″ wallpaper razor scraper. You can try a putty knife for the tiles first, but I doubt that it will take off the adhesive. You could try hot water with some vinegar in it on the adhesive. The razor scraper will likely gouge the walls, but they can be patched.
