** i want to paint my refrigerator black **

There is a black spray paint made specifically for appliances:

** but what do i do with the rubber seal? **

      Leave it alone.

** can i paint [the rubber seal] with a brush **

I wouldn’t recommend you touch it at all. Models with different color door gaskets are made from that color material not colored afterward. I don’t know of any paint that would last on rubber material… for long and it would likely end up looking worse than before.

especially if you use lacquer or enamel paints. Acrylic paints might not harm them but it won’t stick well either and will probably end up chipping and falling off.

If your refrigerator was available in black then ordering a full set of new gaskets in black would be the best option.

Don’t expect any home paint job to be as durable as the factory baked on paint. It will scratch and chip very easily. The paint will wear off on the handles and under the handles very quickly.
