  Will a ziplock bag closed tightly protect a sign from the rain? I’m planning to install some signs outside my house inside ziplock bags.

  They will be waterproof only if you are able to mount it without piercing the bag. Is this to be a wooden or cardboard sign? If cardboard, perhaps you could mount it with a cordless glue gun.
