  We installed a smaller window in our kitchen. Our walls are plaster, we fill in the extra spaces with plywood. Then we were going to put drywall up over the plywood. Can we do this ok or will it cause damage later on.

  That should work. Just tape and feather the mud between the plaster and drywall like a usual joint.
