You want the finished floors to butt up to the toe-kick of the cabinets and run under where the dishwasher and refridgerator will go. Its best to hold off on installing a new floor until you are ready for new cabinets. Vinyl (linoleum) is usually laid in a single or seamed sheet and is cut to fit the kitchen, Once down, it is not possible to change, and is suseptible to damage during removal of cabinets and appliances.

Because of the potential for damage, and possibility of changes in room arrangement, I encourage you to wait until you can do the whole thing. For vinyl, it is the last material put down after cabinets are installed and appliances are ready to install. Just a personal preference, but you might consider a tile floor which would be more durable.
